Just before Christmas I was talking to a friend of mine who was making some edible gifts for her family…including these yummy roasted thyme and tamari nuts (courtesy of Deliciously Ella). I thought that if these nuts were good enough to gift then I best check them out. I made a big batch a couple of days before Christmas and they were long gone by the big day itself – so a definite success. I’ve since made another bigger batch and I’m hoping these will last until the new year.
Apologies that it’s too late to make these as Christmas presents this year but I will certainly be adding these to my list of edible gifts for next Christmas.

400g nuts – my favourites are almonds and cashews but any nuts will do
4 tsp tamari (or soy sauce works fine as well)
2 tsp dried thyme (or 4 tsp of the fresh stuff)
2 tsp chilli flakes (or cayenne pepper)
2 tsp apple cider vinegar
1 tsp sesame oil
salt and pepper to taste
2 tsp agave syrup (or maple syrup) – Deliciously Ella doesn’t include this in her recipe but I think a bit of sweetness adds to the yumminess
- Preheat the oven to 180 C | 350 F | gas mark 4.
- Place the nuts in a baking tray and mix with all the other ingredients.
- When the oven is hot place the tray in the oven and let it cook for about 30 minutes. Make sure you stir the nuts after 10 and 20 minutes so that they cook evenly. Be careful to watch towards the end of cooking as I find just a couple of minutes oven can lead these to burn.
- Once the nuts are crunchy take them out of the oven and allow them to cool before storing in something airtight, or gifting in a little mason jar with a homemade label.
