Raw chocolate peanut butter cake {Madeleine Shaw style}

Clean eating | Recipe binder | Sweet treats

This recipe was my first foray into “raw” brownies and such things that actually tasted good!  I’d tried a few of the Deliciously Ella treats and they just didn’t satisfy my sweet tooth.  But Madeleine Shaw got it spot on for me when she started mixing cocao with peanut butter for this recipe.  I was thinking about this recipe only recently when I made the Raw mega brownies and thought it was one I should definitely put on the blog.  It has been tried and tested a number of times in this house and has certainly passed “the blog test” as we put it!  We all know moderation is everything in life so you can’t go crazy on this stuff but it is nice with a cup of tea on a Sunday or served as a ball (rather than a cake) as an alternative to petit fours.  

 

Ingredients
300g peanut butter
150g hazelnuts
300g medjool dates
2tbsp coconut oil
2 tbsp honey
6 tbsp raw cacoa
1 pinch sea salt
Method

1. Place all the ingredients into a food processor and blitz until fully combined.  You might need to use a spatula to keep pushing it down from the sides.

2. Scrape out the mixture into a cake tin then put into the freezer for 1 hour, followed by the fridge to set (probably another couple of hours or so).

3. Slice it up and enjoy!  It really is that simple…
