Last year I came across this lovely recipe for Christmas granola courtesy of Livia’s kitchen. I only actually managed to make a batch after Christmas during the time before New Year where you don’t know the time of day so I thought I would wait until this year to share with you. It’s a lovely recipe for breakfast on Christmas day as the flavours are deliciously festive. It would also make a great gift, perhaps you could take a jar with you if you are staying with family and friends for Christmas day.
185g jumbo oats
50g oat flour
5 1/2 tbsp maple syrup
4 tbsp coconut oil melted
90g pecans roughly chopped
3 1/2 tsp cinnamon
2 tbsp desiccated coconut
30g dried cranberries
Zest of one orange
- Preheat the oven to 180 C and line a baking tray with greaseproof paper.
- Mix together all the ingredients except the raisins and cranberries in a bowl. This is really important because the fruit will burn and make your granola all yucky if you put it in at this p0int!
- Bake for 30-35 minutes, stirring every 10 minutes.
- Add the dried fruit and leave to cool on the tray.
